Pineapple Upside Down Cupcakes

Next recipe for my co-worker: Pineapple Upside Down Cupcakes. These were really simple and look great. Although a bit messy. I took the advice of flipping them over using the wire rack but I needed something else underneath the wire rack to catch all the syrupy goo (made a bit of a mess on my counter). Also, I unfortunately did not get to taste one of these goodies but my co-workers said they were fantastic so maybe I’ll make them again sometime.

All nice and carmelized on the top. I was able to make 12 cupcakes from the recipe.

I came across this really great baking blog and since I promised my co-workers I’d bake them some goodies for their birthday, it was the perfect time to try some of them out.

On our last visit to Hawaii, I bought a whole bunch of Macadamia Nut Hershey Kisses, much more than I could eat so thought I’d use them up in this recipe.

The only thing I changed from the original recipe is that I used Hershey’s dark cocoa (although I’m not sure if the original blogger would approve since she apparently hates Hershey’s cocoa powder).

They looked a bit like spaceships or sombreros which isn’t a bad thing and I think the cookie would actually taste great without the Hershey kiss inside. I was only able to make about 30 cookies (recipe says about 40) but maybe I made them a bit too big.
