Simon is very protective of his strawberries. He gave me this dirty look this afternoon when I was trying to take a nice photo of him.
Simon fell asleep on this soft blanket with his two best pals: Pooh and Ziggy.
We’re not sure how the sleeping arrangement will be when we go on vacation next week so it’s good to know he can sleep on the floor on a soft blanket as long as he has his pals. He tends to roll around a lot though so we’ll have to devise some way to keep him within a certain area.
Simon now has his own drawer in the kitchen that he can play with. It is filled with plastic containers and lids plus some plastic utensils. He enjoys digging in it and putting things back inside. Something so simple keeps him entertained.
Today we celebrated Simon’s birthday a bit early with our family and a few close friends. Yesterday and this morning I prepared all the desserts and Simon’s first birthday cake. They were inspired by some of Simon’s favorite fruits.
Mini blueberry cheesecakes.
Recipe from I Love Trader Joe’s Cookbook, uses their brand vanilla wafers, marscapone, cream cheese, sugar, lemon zest, and blueberries.
Recipe needs more strawberries as the banana flavor was overwhelming. Also the greek yogurt frosting was more like icing, very runny so maybe needed more powdered sugar to thicken it up.
Cake was very dense and since not sweet, didn’t taste very good. I’m glad Simon wasn’t in the mood to eat cake or else he would have been disappointed.
I would make these again for ourselves, addicting in a way, you can’t just eat one.
The salt crystals on top added a pleasant lingering taste to the cookie.
Simon wanted us to spend the big bucks on his party so pulled out our credit cards, ready to charge away.
We had the party at Zeum Children’s Museum for the nice venue and fun activities available for families. However, during cake time, Simon wasn’t interested in blowing out the candle, he wanted to touch the flame.
He wasn’t in the mood to eat the cake either, just to play with the frosting.
He didn’t get to open his presents at the party either since he was exhausted but checked them out when we got home.
He hasn’t figured out how to rip open wrapping paper yet.
He showed us today how fast he is growing up. He is starting to understand a lot more than he lets on. In this video, we are asking him to look for his Winnie the Pooh, Elmo, and Ziggy the Zebra. It amazed us that he knew what we were talking about and would scan the room looking for his stuffed animals.
Simon says thank you to everyone for coming to celebrate this birthday. Thank you Grandma and Grandpa Chung for providing the lunch. Thank you Auntie Vicki for the pictures. Also, thank you everyone for all the wonderful and thoughtful gifts.
We hope to have many more wonderful celebrations like these.
He started out the morning with some bouncing on the bed to get ready for Gymboree in the afternoon.
I love his wispy hair and round eyes.
At Gymboree, Simon enjoyed going down the slide. He seems to have strong enough back muscles to support himself in the sitting position on the way down.
Simon has taken to eating whole strawberries. Sometimes he uses his front teeth to bite them, sometimes he just crams the whole thing into his mouth and mashes it. Juice normally runs out when he does this.
Simon experiemented with his voice today, mimicking his Sing-a-ma-jig. “Ahhhhh–” Future American Idol?
Or maybe future sumo wrestler?
Or karate?
Cooling down in his bathrobe after all that exercise today.
Then putting on some shades to attract the ladies.
Simon had a busy busy day today. He’ll need a good night’s rest to be ready for his party tomorrow.
Simon is really into electronics. He recently discovered his baby monitor which has an antenna that is easy to grip. Plus he always likes to hold onto Daddy’s keys.
Simon is enjoying fresh strawberries these days. Now he no longer likes grapes.
Plus he is eating peas and corn again too.
Daddy caught Simon making this funny sound in the car ride to pick me up. It’s kind of hard to describe, you’ll just have to listen. What do you think he is saying?
At daycare, they said that Simon is seems to be trying to clap his hands. They were playing the piano and singing. So at home we tried singing to him to see what he would do. We think he’s trying to clap or at least he’s having a good ol’ time waving his arms around.
I got too busy tonight and almost forgot to snap a photo of Simon today so took this as he just went to bed this evening. He’s in this crouching position sometimes when he sleeps and hugs Ziggy and/or Pooh.
