Nectarine Almond Coffee Cake

Another great recipe from Coffee Cakes: Simple, Sweet, and Savory by Lou Seibert Pappas. In the book, it’s under “peach-cashew coffee cake” but I made it work for some ripe nectarines I had and I used slivered almonds (as mentioned in the recipe) instead of cashews.

1/2 cup (1 stick) unsalted butter at room temp
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract (or 1 tbsp amaretto liqueur)
1 cup unbleached all purpose flour
1 tsp baking powder
1/4 tsp salt
4 peaches, peeled, pitted, and cut into 3/8 inch thick slices
I substituted nectarines
2 tbsp freshly squeezed lemon juice
1/4 tsp freshly grated or ground nutmeg
1/2 cup (2 oz) slivered almonds (or roasted cashews)
2 tbsp turbinado or Demerara sugar
Whipped cream or creme fraiche for serving (optional, so I left it out)

Preheat oven to 375 F. Butter and flour an 11 inch fluted tart pan with a removable bottom or a 10 inch springform pan.

In a large bowl, cream the butter and granulated sugar until light and fluffy. Add the eggs and amaretto or vanilla and beat until smooth. In another bowl, combine the flour, baking powder, and salt. Stir to blend.

Mix the dry ingredients into the butter mixture, beating well until smooth. Turn into prepared pan. Toss the peaches (or nectarines!) with the lemon juice and nutmeg and arrange them on top. Sprinkle with the nuts and sugar.

Bake for 25 to 30 minutes, or until golden brown. Let cool in pan on wire rack for 10 minutes, then remove the pan sides. Serve warm or room temp.

I ended up having to bake it for an additional 15 to 20 minutes because the center was still raw then I ended up broiling it for 5 minutes to toast the nuts on top.

Thick layer of fruit.

I love coffee cakes, so easy to bake and so delicious.

Hai Ky Mi Gia and Ghetto Moving

For breakfast I was craving noodles, so we tried to go to Turtle Tower but the wait was out the door so we went to Hai Ky Mi Gia since they also have great noodle soup. I tried “9A” in soup for the first time. It’s clear glass noodles with chicken, kidney, and vegetables. I love their broth and I really enjoyed this bowl of noodles. The glass noodles are a bit harder to pick up with chopsticks but it’s worth the effort.

Afterwards we went in search of a cat tree for the kitties. We finally found one that was a good price and what we wanted at Pet Source… the only problem was how would we bring it home? Remember we only have one car and it’s a Honda Civic. This cat tree is about 6 feet tall and 2 feet x 2 feet square. Luckily, the guys working at Pet Source that day were willing to help us load it on top of our car and using the packing plastic like plastic wrap, to anchor it on the roof. I was laughing while watching them…

Good thing our apartment wasn’t too far away but if Ron drove too fast and hit a bump or pothole on the road, the cat tree would bounce on the roof and you could hear it bouncing on the roof. But after removing it, there weren’t any dents on the roof, just it was wiped clean.

When we first brought it in the apartment, the cats ignored it. Once we moved it near the window so that they could sit on it and learned they could sit on it to look out the window. But they’re not that intrigued by it yet, I think we’ll need to buy some catnip to entice them a bit more.

Oh, the price? $120, 50% off original price of $240. These things are more expensive than I thought. The other store we went to had smaller ones (only 3 ft) which were $180, so this was a much better deal… plus worth a good laugh.

Saturday Morning Wake-Up Call & Ikea

A great way to start the three-day weekend:

Misu is curled up so that somehow, his hind leg is in front. I caught this with my camera phone when I woke up.

We are doing our best to avoid going to the East Bay this weekend while they are doing construction on the Bay Bridge so instead of going to Emeryville Ikea, we went to the one in East Palo Alto. We had a baby shower in Foster City to go to in the late afternoon so went to Ikea to get a dresser and have a quick lunch.

We tried their rib special served with fries and corn bread. The ribs were a bit cold but otherwise good. The fries a bit over battered. The corn bread was really yummy.

We also shared the Swedish meatball special. They ran out of mashed potatoes so had mac ‘n’ cheese instead. Always special and yummy.

At Ikea, I finally got myself a dresser and a great storage unit for my crafts.

NOPA

We had a work social gathering at NOPA restaurant. Unfortunately I think I missed most of the appetizers since I got off work at 6:45pm and ended up walking to the restaurant from work and got there at 7pm (they started at 5:30pm). I ended up getting their hamburger with pickled onions and fries (with extra bacon and Gruyere cheese).

It really hit the spot. The burger was delicious with the bacon and cheese and a basil aioli with the fries was really yummy. The restaurant was really crowded and the bar was mostly standing room only. It was a good way to end the week before the long weekend.

Plus now I finally am updated on this blog. Since we moved, I misplaced my SD card reader so wasn’t able to upload any photos until I found my reader today.

The Cheeseboard Collective

Ron happened to be in Berkeley today so stopped by The Cheeseboard Collective to pick up some pizza for dinner. He always talks about this place and I have yet to try it. They post their menu each week online and today’s special:

Tuesday’s Pizza (09/01/2009):

Heirloom Tomatoes, Onions, Mozzarella Cheese, Parmesan Cheese, PINENUTS, Basil, Garlic Olive Oil.

Ron said their was a line forming out front before they opened at 4:30pm. I thought the pizza would be spectacular but other than really fresh ingredients, I’m not sure what was so special. One funny thing though is they serve you a full pizza plus two extra slices on top.
