Simon Day 24 – Me and Biggie Pooh

Simon received a Biggie Pooh as a gift on my last day at work from one of my co-workers. Now that Simon’s neck is a bit stronger, we decided to pose him with Pooh (and Froggie)… and Simon is only about the size of Pooh’s paw!

Simon tried on some new outfits today. This triceratops in a bathtub is from Ron’s friend Doug R. Unfortunately, Simon wet himself so we had to change him. But he did have a very comfortable nap while dressed in it. Ron thought it so funny that he’s so relaxed and floppy.

We gave him a bath and changed him into a “I’m wild about mommy” sleeping outfit.

Although changing him into a sleeping outfit didn’t help him sleep. He stayed awake most of the evening but I hope he sleeps well tonight.

Simon Day 23 – How tiny I am!

I always think of Simon as a really big baby for his age but, in reality, he’s still very tiny compared to us. Seeing him sleep on our California King bed reminded me of this fact.

Andreas came to “inspect” (his words :D) Simon this evening. He brought us a bottle of Veuve Clicquot so Simon will have his first taste of champagne as I drank half a flute.

Simon is learning how to stick out his tongue!

Nyah Nyah Na-Na Nyah!

Gingersnaps

Ron’s parents have been bringing us tons of ginger (it’s supposed to help me recover faster from childbirth) so we need to use it somehow since we just can’t eat it all. Although this recipe for gingersnaps does not use a lot of ginger, at least it uses fresh ginger.


This recipe is adapted from Martha Stewart’s Baking Handbook.

INGREDIENTS
2 cups all-purpose flour
2 tsp baking soda
3/4 tsp ground cinnamon
1/4 tsp ground cloves (omitted)
1/4 tsp freshly ground pepper
1/2 tsp salt
1-1/2 sticks (3/4 cup) unsalted butter, room temperature
1-1/4 cup dark brown sugar (used 1/4 cup dark brown sugar, 1 cup light brown sugar)
1/4 cup unsulfured molasses
1-1/2 tbsp finely grated, peeled ginger (used 2-1/2 tbsp)
1 large egg
1/4 cup granulated sugar

DIRECTIONS
1. In large bowl, whisk together flour, baking soda, cinnamon, cloves (if using), pepper, and salt; set aside.
2. In bowl of electric mixer fitted with paddle attachment, beat butter, brown sugar(s), molasses, and ginger on med-hi speed until light and fluffy (2-3 minutes), scraping down sides of bowl as needed. Beat in the egg until smooth and combined (~1 minute). Add flour mixture, and beat on low speed until just combined. Transfer dough to a bowl and wrap in plastic; refrigerate until well chilled, about 1 hour or overnight.
3. Preheat oven to 350 F, with racks in the center and lower third. Line two large baking sheets with parchment paper. Shape dough into 1-inch balls. Place granulated sugar in a shallow bowl; roll balls in sugar to coat completely, and place about 2 inches apart on the prepared sheets.
4. Bake, rotating sheets halfway through, until cookies are deep golden all over and centers are firm, 15-18 minutes. Transfer cookies to a wire rack to cool completely. Cookies can be kept in an airtight container at room temperature for up to 4 days.

The cookies are soft when you first take them out of the oven but they harden as they cool. The outside is a bit crispy/crunchy but chewy in the center. The ginger flavor is pretty strong and gives the cookie a kick! Martha Stewart suggests that these cookies are good for crushing up to make a pie crust… sounds like a good idea?

Simon Day 22 – Relaxing at home

We’ve found that Simon has a hard time rolling his head from one side to the other when he is flat on his back (because he has a bit of a pointy head still) so today we tried putting him in My Brest Friend to see if propping him up a bit would help.

He seemed to like it and it was easier for him to turn his head from side to side to look around. I used this breast feeding pillow for the first 2 weeks when it used to take Simon more than 30 minutes on each breast. Now he’s much more efficient and only feeds about 10-15 minutes on each side so I hardly have time to put on the Brest Friend. I’m glad we might have another use for it. It is made of really nice, soft fabric and a sponge inside is really comfy.


Although I really love just taking a nap with Simon on my chest. He’s nice and warm… but he got a little too warm today, he got all sweaty and woke up for 30 seconds to cry and once I put him down on the sofa, he fell right back to sleep.

Simon Day 21 – Tracking objects

When we were at Babies”R”Us the other day, we picked up at little frog rattle for Simon since Ron really liked it. We’ve named him “Froggie” and when Simon is awake, we’ve been shaking it in front of him and we notice that he is tracking better with his eyes now. He’s still a bit cross eyed sometimes but it seems like he is getting better at tracking objects like his toy and at tracking us as we move in and out of his field of vision.


After all the eye exercise, Simon needed a little nap with Froggie.

Simon slept really well last night too. He didn’t seem like he wanted to wake up this morning but after sleeping for four hours straight and having not eaten, I thought it best to wake him so he wouldn’t start crying when he was extremely hungry. After eating, he promptly fell asleep again and slept for another 2 hours, woke again to eat, then slept for another 2 hours which made it 9am. He may have done too much sleeping so didn’t nap again until almost 3pm! So thank goodness he’s being more interactive with toys or else I’d feel bad he was really bored.

He didn’t really get tired again until 9pm. He really likes to have his arm (or arms) near his face. I wonder if they ever fall asleep?

I can’t believe he’s already 3 weeks old! Time seems to flying by…
