Macaroni and Cheese with Butternut Squash

In addition to the dessert, I prepared a side dish of Macaroni and Cheese with Butternut Squash. The butternut squash gives the dish a bit of sweetness. It was a pain to peel the squash though, not sure if I’d want to do it again.

The cheddar and squash color look almost the same so it’s hard to tell the difference between what is cheese and what is squash. The dish also lacked a bit of salt, so that might need to be adjusted.

Two Persimmon Tart with Almond Base

For our Thanksgiving potluck at work, I pulled out this recipe from a few years ago from the SF Chronicle: Two Persimmon Tart with Almond Base. It’s been many years since I made it but I remember it being a big hit. The ingredients include both the Hachiya (soft) and Fuyu (crunchy) persimmons.

The tart dough has to refrigerate overnight so if you’re going to try this recipe out, make sure you give yourself plenty of time.

We have a Hachiya persimmon tree at home but I actually don’t like to eat this type of persimmon (I prefer the Fuyu persimmons) so I found this recipe a good way to use the pulp from the Hachiya persimmons.

King Foot Subs

Having the day off in the middle of the week is weird but great! I wish we could have holidays like this more often. Although I’m sure it’s going to be really busy at work tomorrow… but so far had a great day today.

Started with sleeping in then having lunch down the street at King Foot Subs. Today they happened to be celebrating their 34th Birthday! So they are offering a free soda and free bag of chips with any 14″ sub purchase, through December 11, 2009.

We ordered their Kalbi King Sub. Filled with kalbi, kimchi, lettuce, tomatoes, and cheese. The bread is nicely toasted. They split the sub for us, first in half, then into quarters. It was quite filling. Cost ~$14. A bit expensive but then this was a specialty sub. The regular King size subs are ~$10. The large subs are ~$5.

Since it’s so close by, I’ll definitely go back again.

The rest of the day was spent at Starbucks, catching up on some reading and enjoying a Pumpkin Spice Latte. Then some shopping, big crowds were out today, guess there were a lot of people with the day off today. Then finally, my Dyson DC25 Animal arrived which I ordered refurbished from Overstock. It works wonders… I vacuumed one carpet and it looks brand new, it sucked up all the cat hair and dust. Since it arrived so late, I didn’t want to disturb the neighbors too long so I’ll wait for the weekend to finish cleaning. I can’t wait for a nice clean apartment, free of cat hair (except for the hair on the cats).

Tartine Chocolate Oatmeal Walnut Cookies

I felt like making a really good cookie and we had a 400gm Toblerone bar that Ron’s parents brought us back from their recent trip Australia. Actually we have two of them which would take a long time for us to eat so I thought it best to bake with it.

I chose a recipe from my Tartine cookbook for Chocolate Oatmeal Walnut Cookies so replaced the bittersweet chocolate with the Toblerone bar.

I made them a few different sizes, from 2 to 3 inches in diameter. Apparently Tartine makes them in a 5 inch size! I ended up with more than 30 cookies of various sizes. They were thin, crispy on the edges, but also chewy. Very delicious if I say so myself. So delicious that Ron ate four in one sitting. I’ll definitely make these again.

Cats taking over the bed

So the cats sleep on my side of the bed, especially when I’m not sleeping and when they think we’re not paying attention. With the baby coming, we’re trying to break them of the habit but it’s tough, especially when I’m tired and too lazy to shoo them away.
